Created by Flat Iron’s Head of Beef Fred Smith, Flat Iron’s burger only changes once a year, making its annual launch one of the most eagerly awaited dates on the calendar, for both guests and the Flat Iron team.

Some of the best burgers are built on just a few ingredients. For Flat Iron’s new burger, it starts with two patties, made using beef from their herd in North Yorkshire. Then come paper-thin slices of sweet white onion, smashed directly into and around the beef as it cooks.

Some slices caramelise, some steam and some keep a little crunch – this is where the magic lies. It’s then topped with American mustard and cheese, crunchy pickles, ketchup bearnaise and crispy batter scraps – a tip-of-the-cap to Flat Iron’s popular ‘Bearnaise Burger’ of Summer ’23. The burger also pays homage to the ‘Fried Onion Cheeseburger’ popularised by George Motz, American hamburger enthusiast, chef and author of Hamburger America.

We spend months refining it, and this year's version is all about celebrating how good beef, onion, mustard and cheese can be when every element is done properly. The onion-smashing technique creates an incredible depth of flavour, while the ketchup béarnaise brings a richness that ties everything together. It's simple, messy and incredibly satisfying.”

The Smashed Onion Double Cheeseburger is available in all Flat Iron restaurants from July 7th .
